WHAT IS ENZYME? WHY WE USE THEM?

Enzymes are natural substances produced by an organism that act as catalysts to generate a specific biochemical reaction.
Basically, the wheat contains different kinds of enzymes at various quantity depending on the wheat type and climate conditions. However, this quantity of enzymes in the wheat is not always adequate. For this reason, the improvement of the wheat flour is needed by adding some specific enzymes in order to reach optimum performance.
